happy new year black eyed pea dip

I love black eyed peas, but haven't always. When I was younger, my mom didn't want my sister and me to miss out on our luck, so she turned our not-so-favorite legume into a tasty, savory dip. Now, this dip is a January 1 staple for our whole family. And last year, Summer discovered that it is even great in a burrito with sliced red bell pepper, avocado and a little sour cream. So as a wish for a prosperous, happy and healthy new year, I am sharing this tasty little recipe with my friends who may not be a fan of the pea with the little black eye. Enjoy!

New Year Black Eyed Pea Dip

3 cans of black eyed peas with jalapenos and liquid
1/2 medium onion, chopped
1 clove garlic, chopped
8 oz cheddar cheese
1/4 c margarine (the original recipe calls for a full cup, but that's too rich for me.)

Mix peas with jalapenos, liquid, onion and garlic in blender. Melt cheese and margarine in saucepan. Add blended ingredients to cheese and stir until dip is hot and cheese is fully incorporated. Enjoy with chips (or in a burrito!)
